The Perfect Summer Raw Vegan Eats!

INGREDIENTS 

8-10 Red Spinach leaves washed and dried with a paper towel
1/2 Cup walnuts 
2 tbs almond mill
1/3 cup dried carrots (using dehydrator or lightly roasting in oven on 200°F)
1 tsp Minced onion
1/3cup red onions
A Few Cilantro leaves 
1 tsp agave 
1/2 tsp salt 
1/3 cup mushrooms 
A Dash smoked paprika 
4 or 5 cherry tomatoes

Throw all ingredients in a food processor and pulse until its crumbly. I also add a little bit of Tones Seasoning to the meat mixture to give it more flavor! Lay out spinach leaves and spoon out meat mixture and onto leaves.

Coconut cream queso drizzle 
1/2 can of Full fat coconut milk dash red hot sauce original, garlic powder, 1 tsp dry herb mix (My own personal Blend) substituted (veggie dip packs) add a pinch of curry powder and blend in a bullet or food processor and drizzle over tacos! Enjoy!

I sprinkle nutritional yeast on top for a little added flavor!

I know I know you are here fore the recipe but let me tell you about the Chef behind it first! I would like you all to meet someone very special! Her name is Chef Angelica of Soul Edibles and she is one of the smartest Chefs I know! She layers flavors like no other and knows how to make your taste buds sing. Her food does just that to me every time I taste it. Chef Angelica, soon to be graduate of The International Culinary School at the Art Institute of Atlanta has been cooking since she was a little girl. Her background of indigenous flavors combined with her technical savvy approach to food is what makes her a force in the culinary industry. She recently competed in a raw vegan cook off where she took 2nd place amongst some really talented Chefs who brought their A game. She is a new mommy of a beautiful baby girl Ashe’ Nandi and she has not skipped a beat. Truly a inspiration to me and the community she serves. Her food speaks for itself and to give you a little preview I would like to share one of her Raw Vegan Recipes with you. With that being said lets get cooking! Well Mixing because this is a Raw Vegan Challenge.

INGREDIENTS

  • 1 avocado halved
  • 2 tablespoons freshly squeezed lemon juice divided
  • 1/2 teaspoon kosher salt divided
  • 1 bunch kale stems removed and discarded, leaves coarsely chopped (about 8 cups)
  • 1 15-ounce can chickpeas drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup roasted pumpkin seeds

INSTRUCTIONS

  1. Scoop the flesh from one of the avocado halves out of its skin and put in in a large bowl. Add 1 tablespoon of lemon juice an 1/4 teaspoon of salt, and mash everything together. Add the coarsely chopped kale leaves and massage them by hand with the avocado mash until the kale becomes tender. Place the kale-avocado mash on a serving plate.

  2. Remove the flesh of the remaining avocado half from its skin and chop into bite-size chunks. Please in the bowl that contained the kale, and add the chickpeas.

  3. In a small bowl, whisk together the olive oil, remaining 1 tablespoon of lemon juice, remaining 1/4 teaspoon of salt, and the pepper. Drizzle over the chickpeas and avocado and toss to combine. Pile on top of the kale-avocado mash, and top with the roasted pumpkin seeds.

Honestly anything to curve this craving for a double fudge chocolate chip pound cake. I love desserts, especially if they are moist and ooey gooey! That’s exactly what this Raw Vegan Dessert delivers. Its definitely one of my go to favorites when I’m doing a raw vegan challenge. The first time I made this dessert was a total experiment. I was practicing for a Raw Vegan farm to skin cook off I had entered and one of the ingredients I had feature was carrots. The first thing that popped into my brain was dessert. I started to add all the things that would complement this dish like dates, almond mill, flax seeds, cashews and maple syrup. Before you know it I had a yummy deconstructed carrot cake. I though well lets make it into a truffle and roll it on coconut flakes. Dessert can be fun and healthy you just have to get creative. Think about the things you like that are not so healthy and remix them with more vibrant plant based ingredients. Anyways here is the recipe. Enjoy the indulgence!

Ingredients

1 1/2 cup shredded try colored heirloom carrots

10 whole pitted date

1/2 cup raw cashews

2/3 cup almond mill

1 tbs flax seed

1/4 cup maple syrup

1 tsp cinnamon

1/4 tsp cardamom

pinch of pink salt

hand full of pumpkin  seeds

1 cup coconut flakes

Directions

Mix all ingredients in food processor and pulse until combined

Scoop 1 tbs of carrot mixture and roll into truffle balls

pour coconut flakes in small bowl and roll truffle balls in coconut flakes until coated

chill in refrigerator for a hour and serve! See easy peasy!

But Baaaybe! After those 7 days I  felt so good! I had more energy, I felt lighter, My clothes started to fit a lot better and I was just functioning so vibrantly! I decided if I could do it for 7 days I could do it  for 14 days! After 14 days I felt even better and lost more weight. I thought to myself if  I could go 7 days then 14 days I can definitely go 21 days and kill it!

Now I want everyone to experience the same vibrant feeling I do when I consume all Raw Vegan foods for a consistent period of time. So this Challenge starts Monday April 15th and it goes through May 5th. If you want to participate in the Challenge and win then you must be following me on social media @imaginechefmal on instagram! All you have to do is post one Raw Vegan Meal a day for 21 days tagging my personal page as mentioned above as well as @imagineedenherbs and @imagineeden then use hashtag #imdownchefmal . That’s it! Along with the RAW Vegan Challenge I will be doing  a group Parasite Cleanse! Drinking one 24 oz of the blend a day is the goal but I’m going to be honest with you that is a challenge in itself! The tea is very bitter and you are not to sweeten it! This combination of bitter herbs are geared towards kicking those parasites out! Bitter herbs start working the second they hit your tongue. They signal the body to increase bowel flow. In other words your taste buds are talking to the nutrient sucking parasites in your body saying you ain’t got to go home but you got to get the heck up out of here!

So Welcome to the Raw Vegan Challenge and Group Parasite Out Cleanse!

The first thing you want to do is make up in your mind that for 21 days healthy feels better then pizza taste! At least that what I tell myself. You want to commit to this challenge and prepare yourself mentally. Second you want to take a look at the tools you have in your kitchen. The main tools I use when working with RAW vegetables are below.

1.) Food Processor

2.) Ninja Blender or Vitamix  ( or a good blender)

3.) Good Knives

4.) Spiralizer

5.) Mandolin

6.) Cutting Board

7.) Freezer Baggies

8.) Tupperware

9.)  Zester ( for Lemons/Limes/Oranges)

10.) Cheese Grater ( not for cheese)

The next thing you need to do is go get your RAW veggie ingredients! I personally like shopping at my local farmers markets. Its way cheaper for one then going to a mainstream grocery store. You also get a better variety of produce, even wild fruits and veggies you might want to try! When you shop a your local Farmers Markets you are supporting the community of Farmers that work so hard to provide quality crops. You will save money all while building relationships and moving culture forward. Here are some of the RAW ingredients I like to keep in rotation while I’m doing this challenge.

Tomatoes/red onions/lemons/red peppers/zucchini/sweet potatoes/butternut squash/almond butter/pecans/walnuts/mushrooms/strawberries/swiss chard/cantaloupe/limes/oranges/pomegranate/avocado/sun dried tomatoes/blueberries/bananas (frozen and unfrozen)/kale/bib lettuces/garlic/parsley/basil/carrots/apples/pineapples/olive oil/grape seed oil/ coconut oil/stone ground mustard/honey/maple syrup/Pink Himalayan sea salt/pepper corns/basil/coconut milk/chai seeds/pumpkin seeds/hemp seeds/cashews/pure vanilla flavoring/mango/pears/natural springs water or alkaline water/raw rolled oats/

These are just some of the main RAW ingredients I like to have on hand to get me started on my Challenge! You can add whatever you like just make sure you are eating a combination of nuts, fruits, greens. You can have all the smoothies, juices,nuts, greens, fruits and dried fruits you want all day long! Make sure you are staying hydrated all day long and make sure you are eating and snacking only on RAW foods all day long. I eat about 4-6 times a day when I do this challenge so no conviction here because its all good stuff.

Lastly, Don’t give up! Remember why you started and keep going. Your Higher self will thank you later!
