Sweet and Savory! You cant go wrong! This Almond Ricotta specifically can be used in so many ways this is just one of my favorite ones! You can also use it as a spread in wraps, in stuffed mushrooms, stuffed zucchini and so much more! But first you gotta know how to make this yumminess so check it out below!

Ingredients: 2 cups of raw unsalted almonds, (soaked in water overnight) 2 tbs water, 1/4 cup canned coconut milk, 1 tbs grapeseed oil, pinch of Pink Salt, 2 tbs nutritional yeast, 1 tbs white vinegar, a squeeze or 2 of mustard and 10-12 or more pitted medjool dates for stuffing!

Peelings vs Feelings (Soaked Slivered Almonds can replace)

Step 1: Take soaked almonds and peel them…yes peel them one by one. Now you can get slivered almonds and soak them and the consistency may vary but you will still have a very similar outcome. I personally like the texture and flavor of the almonds better if I peel them after soaking but you don’t have to!

Step 2: Combine all ingredients for almond ricotta listed above into a food processor and pulse until texture is ricotta like. You may have to add extra water to smooth it out but after that you are ready for stuffing!

Your Ricotta Should look something like this

Step 3: Slice the middle but don’t cut all the way through. Just slice enough to be able to stuff. Scoop out 1/2 tsp of almond ricotta and stuff in pitted dates. Top with dried plantain chips, or any other kind of fruit topping you like and serve!

Believe it or not but that’s my favorite part! At the most you have to make time for prep and that is it! Take these fancy but yummy stuffed Mushrooms. They look like they took over a hour to make but nope! Maybe 15 min and your done! Check out the recipe below and jump on this raw vegan goodness!

WHAT YOU NEED AND WHAT TO DO!

Remove Steams from Baby Bella’s and also add to food processor.

Food Processor. (Meat Stuffing) 12 Whole bella mushrooms, 1/3 cup of walnuts, 5 or 6 sun dried tomatoes, 2 whole pitted dates, handful of mixed greens (salad mix) 1 tsp nutritional yeast, 1 tsp salt, 1/4 cup grapeseed oil. Add all ingredients to food processor and pulse until you have a stuffing type of consistency pictured below. Add walnut meat stuffing to pitted mushrooms about 1 tsp scoops should be enough.

Chipotle Mayo Sauce is just 2 cups soy free vegan mayo, 1 tbs apple cider vinegar, 1/2 tsp cayenne pepper, pink salt, dry herb seasoning, and sun dried tomatoes blended smooth in a high speed blender. drizzle on top of stuffed mushrooms. I also added spicy mango salsa (store bought) and nutritional yeast for added flavor and garnish!

This dish is super easy and so vibrant and not to mention delicious! Enjoy and Heal Easy!

Recipe:

The Perfect Summer Raw Vegan Eats!

INGREDIENTS 

8-10 Red Spinach leaves washed and dried with a paper towel
1/2 Cup walnuts 
2 tbs almond mill
1/3 cup dried carrots (using dehydrator or lightly roasting in oven on 200°F)
1 tsp Minced onion
1/3cup red onions
A Few Cilantro leaves 
1 tsp agave 
1/2 tsp salt 
1/3 cup mushrooms 
A Dash smoked paprika 
4 or 5 cherry tomatoes

Throw all ingredients in a food processor and pulse until its crumbly. I also add a little bit of Tones Seasoning to the meat mixture to give it more flavor! Lay out spinach leaves and spoon out meat mixture and onto leaves.

Coconut cream queso drizzle 
1/2 can of Full fat coconut milk dash red hot sauce original, garlic powder, 1 tsp dry herb mix (My own personal Blend) substituted (veggie dip packs) add a pinch of curry powder and blend in a bullet or food processor and drizzle over tacos! Enjoy!

I sprinkle nutritional yeast on top for a little added flavor!

Her name is Chef Angelica of Soul Edibles and she is one of the smartest Chefs I know! She layers flavors like no other and knows how to make your taste buds sing. Chef Angelica, soon to be graduate of The International Culinary School at the Art Institute of Atlanta has been cooking since she was a little girl. Her background of indigenous flavors combined with her technical savvy approach to food is what makes her a force in the culinary industry. She recently competed in a raw vegan cook off where she took 2nd place amongst some really talented Chefs who brought their A game. She is a new mommy of a beautiful baby girl Ashe’ Nandi and she has not skipped a beat. Truly a inspiration to me and the community she serves. Her food speaks for itself and to give you a little preview I would like to share one of her Raw Vegan Recipes with you. With that being said lets get cooking! Well Mixing because this is a Raw Vegan Challenge.

INGREDIENTS

  • 1 avocado halved
  • 2 tablespoons freshly squeezed lemon juice divided
  • 1/2 teaspoon kosher salt divided
  • 1 bunch kale stems removed and discarded, leaves coarsely chopped (about 8 cups)
  • 1 15-ounce can chickpeas drained and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup roasted pumpkin seeds

INSTRUCTIONS

  1. Scoop the flesh from one of the avocado halves out of its skin and put in in a large bowl. Add 1 tablespoon of lemon juice an 1/4 teaspoon of salt, and mash everything together. Add the coarsely chopped kale leaves and massage them by hand with the avocado mash until the kale becomes tender. Place the kale-avocado mash on a serving plate.

  2. Remove the flesh of the remaining avocado half from its skin and chop into bite-size chunks. Please in the bowl that contained the kale, and add the chickpeas.

  3. In a small bowl, whisk together the olive oil, remaining 1 tablespoon of lemon juice, remaining 1/4 teaspoon of salt, and the pepper. Drizzle over the chickpeas and avocado and toss to combine. Pile on top of the kale-avocado mash, and top with the roasted pumpkin seeds.

Honestly anything to curve this craving for a double fudge chocolate chip pound cake. I love desserts, especially if they are moist and ooey gooey! That’s exactly what this Raw Vegan Dessert delivers. Its definitely one of my go to favorites when I’m doing a raw vegan challenge. The first time I made this dessert was a total experiment. I was practicing for a Raw Vegan farm to skin cook off I had entered and one of the ingredients I had feature was carrots. The first thing that popped into my brain was dessert. I started to add all the things that would complement this dish like dates, almond mill, flax seeds, cashews and maple syrup. Before you know it I had a yummy deconstructed carrot cake. I though well lets make it into a truffle and roll it on coconut flakes. Dessert can be fun and healthy you just have to get creative. Think about the things you like that are not so healthy and remix them with more vibrant plant based ingredients. Anyways here is the recipe. Enjoy the indulgence!

Ingredients

1 1/2 cup shredded try colored heirloom carrots

10 whole pitted date

1/2 cup raw cashews

2/3 cup almond mill

1 tbs flax seed

1/4 cup maple syrup

1 tsp cinnamon

1/4 tsp cardamom

pinch of pink salt

hand full of pumpkin  seeds

1 cup coconut flakes

Directions

Mix all ingredients in food processor and pulse until combined

Scoop 1 tbs of carrot mixture and roll into truffle balls

pour coconut flakes in small bowl and roll truffle balls in coconut flakes until coated

chill in refrigerator for a hour and serve! See easy peasy!

I totally understand! Trust me! I feel the same way! Don’t get me wrong I love Salads but I also like to switch it up a bit. Even though when you eat Raw Vegan every meal is almost like deconstructed Salad De La Dressing. The cook thing about eating Raw Vegan is you don’t have to “COOK” anything but it doesn’t hurt to get creative! I tend to get most creative with sauces especially. The most recent one I got creative with is Sweet potatoes and Zucchini noodles tossed in a Sesame Ginger Peanut Sauce. Oh man, its so yummy! Well get to the recipe in a min but lets talk about the combination of peanuts, ginger and sesame! These are three of my favorite flavors. Sesame oil is high in antioxidants, helps lower blood pressure and contains unsaturated fats. Ginger oh ginger! This herb has so many health benefits so cooking with it is just smart. Ginger has anti-inflammatory properties, settles upset stomach, excellent for cold and flu and so much more. Peanuts are a great source of protein for all you “well what do you do for protein” folks Love y’all but you get plenty of protein from plants…but that’s another blog post! My point being cooking with foods that are rich in nutrients and water is actually better for our body. Here is a living dish you can put your own spin on…

Raw Vegan Sweet Potatoes and Zucchini Noodles with a Sesame Ginger Peanut Sauce

Ingredients

1 Large sweet potato (spiralized)

1 zucchini (spiralized)

1/4 cup coconut oil

1 tsp dried red pepper seasoning

1/2 tsp pink sea salt

1/2 lemon juice

1 tbs sesame oil

2 tsp grated ginger

2 tbs maple syrup

2/3 cup organic creamy peanut butter

1-2 tsp coconut aminos

2 tbs or more of water

2 garlic cloves minced

Baby arugula for garnish

 

Directions

Spiralize sweet potatoes and zucchini drizzle a little oil and lemon juice set aside to marinate.

In food processor blend coconut oil, pink sea salt,lemon juice, sesame oil,grated ginger, maple syrup,peanut butter,garlic, coconut aminos and water. Blend until smooth season to taste. Add a little bit of water if not smooth enough. You want a creamy consistency.

Once you have a smooth consistency peanut sauce pour over noodles and toss in baby arugula plate and serve!

 

See now that wasn’t so bad was it? Listen your food processor will be your best friend during a Raw Vegan Challenge because you can transform so many different ingredients into some really amazing sauces and who are we kidding Sauce Matters!

But Baaaybe! After those 7 days I  felt so good! I had more energy, I felt lighter, My clothes started to fit a lot better and I was just functioning so vibrantly! I decided if I could do it for 7 days I could do it  for 14 days! After 14 days I felt even better and lost more weight. I thought to myself if  I could go 7 days then 14 days I can definitely go 21 days and kill it!

Now I want everyone to experience the same vibrant feeling I do when I consume all Raw Vegan foods for a consistent period of time. So this Challenge starts Monday April 15th and it goes through May 5th. If you want to participate in the Challenge and win then you must be following me on social media @imaginechefmal on instagram! All you have to do is post one Raw Vegan Meal a day for 21 days tagging my personal page as mentioned above as well as @imagineedenherbs and @imagineeden then use hashtag #imdownchefmal . That’s it! At the end of the 21 days I will pick a winner and they will receive an entire line of my teas for free! Yes the Freeski! Valued at over $60!

Along with the RAW Vegan Challenge I will be doing  a group Parasite Cleanse! Drinking one 24 oz of the blend a day is the goal but I’m going to be honest with you that is a challenge in itself! The tea is very bitter and you are not to sweeten it! This combination of bitter herbs are geared towards kicking those parasites out! Bitter herbs start working the second they hit your tongue. They signal the body to increase bowel flow. In other words your taste buds are talking to the nutrient sucking parasites in your body saying you ain’t got to go home but you got to get the heck up out of here!

The first thing you want to do is make up in your mind that for 21 days healthy feels better then pizza taste! At least that what I tell myself. You want to commit to this challenge and prepare yourself mentally. Second you want to take a look at the tools you have in your kitchen. The main tools I use when working with RAW vegetables are below.

1.) Food Processor

2.) Ninja Blender or Vitamix  ( or a good blender)

3.) Good Knives

4.) Spiralizer

5.) Mandolin

6.) Cutting Board

7.) Freezer Baggies

8.) Tupperware

9.)  Zester ( for Lemons/Limes/Oranges)

10.) Cheese Grater ( not for cheese)

The next thing you need to do is go get your RAW veggie ingredients! I personally like shopping at my local farmers markets. Its way cheaper for one then going to a mainstream grocery store. You also get a better variety of produce, even wild fruits and veggies you might want to try! When you shop a your local Farmers Markets you are supporting the community of Farmers that work so hard to provide quality crops. You will save money all while building relationships and moving culture forward. Here are some of the RAW ingredients I like to keep in rotation while I’m doing this challenge.

Tomatoes/red onions/lemons/red peppers/zucchini/sweet potatoes/butternut squash/almond butter/pecans/walnuts/mushrooms/strawberries/swiss chard/cantaloupe/limes/oranges/pomegranate/avocado/sun dried tomatoes/blueberries/bananas (frozen and unfrozen)/kale/bib lettuces/garlic/parsley/basil/carrots/apples/pineapples/olive oil/grape seed oil/ coconut oil/stone ground mustard/honey/maple syrup/Pink Himalayan sea salt/pepper corns/basil/coconut milk/chai seeds/pumpkin seeds/hemp seeds/cashews/pure vanilla flavoring/mango/pears/natural springs water or alkaline water/raw rolled oats/

These are just some of the main RAW ingredients I like to have on hand to get me started on my Challenge! You can add whatever you like just make sure you are eating a combination of nuts, fruits, greens. You can have all the smoothies, juices,nuts, greens, fruits and dried fruits you want all day long! Make sure you are staying hydrated all day long and make sure you are eating and snacking only on RAW foods all day long. I eat about 4-6 times a day when I do this challenge so no conviction here because its all good stuff.

Lastly, Don’t give up! Remember why you started and keep going. Your Higher self will thank you later!

Birth Control made my situation worse! So, IMAGINE healing remedies that were used thousands of years ago still work today! Here is my Story.

On two separate occasions, I had issues with excessive bleeding and irregular cycle’s. The first time I had issues with bleeding it was for 6 long months. I went to the doctor and had a normal pap exam. I explained to my doctor what was going on with me and how long I had been dealing with the issue. I had blood test ran, ultrasounds and more pap exams to try and determine what was going on and how it could be treated. All my test came back normal and my doctor asked me if I was stressed out. Well there were some things in my life that may have caused me to stress but I had no idea I was stressed! I did have a lot going on, working a fulltime job trying to run a business, manage relationships, keep up with all the events I was scheduled for, keeping up a house paying bills and trying to figure out how to fire my boss and be a fulltime entrepreneur without going under and you know, all the day to day struggles of life. Im sure my on and off yo-yo dieting didn’t help since my weight was fluctuating I realized I was doing too much and needed to slow down first and take some time to listen to my body and take care of myself. I then decided to eliminate mainstream poultry from my diet. I didn’t have a desire for it anymore so it was easy for me to transition. I’ve always loved vegetables and been into natural food and natural medicine because that was my Mother’s lifestyle and that was also how she raised us as kids.

My Doctor decided that the best way to regulate my cycle was to put me on a hormone pill and if that didn’t work she also gave me a 3-month sample of birth control to use if the hormone pill didn’t work. I did give it a try after all I had been bleeding for so long and I just wanted it to stop already. It made my flow super heavy and I was in extreme pain. So, I stopped taking them both. And decided to believe every day that my cycle would regulate and I would pray over myself daily. I continued to eat lots of green foods and veggie soups and herbal teas specifically for menstrual issues and it did finally regulate.

The second time I noticed my cycle was going through an irregular phase again I don’t know why but I hopped right on the birth control pill again to see if it would regulate quickly. It didn’t…again I blead worse and it literally felt like my uterus was falling out of my vagina! Sorry for the graphics but that’s the best way I can describe it. I thought to myself what am I doing “Im an herbalist”. I was going through another stressful season so again I had to listen to my body and do the necessary. I had just finished up my certification to become a Community Herbalist and learned about these womb healing herbs so I created this a tea blend that consist of Red Raspberry leaf, Lady’s mantle, chamomile, Vitex Berry or chasteberry, nettle leaf and I added some of my favorite dried fruits. I started drinking this tea regularly like three times a day and in about a week in a half my cycle cleared up and is now on track for regulating. I don’t have the painful cramps like I use too, I can function if I’m on my cycle like normal and I have a lighter flow then I use too!

I posted my story on social media and a lot of women reached out to me expressing that they were having various menstrual issues as well.
